Half Way Point!

Yay!  I'm finally at the half way point for my Whole 30.  It has been tough but I'm so thankful I've stuck with it.  Two more weeks to go!  I know I am NOT supposed to be weighing myself but it has definitely helped me keep with it.  Down 13lbs so far.  Pretty good for two weeks, right?  Unfortunately I am not one of the nursing Mamas who loses weight while breastfeeding.  :(  I think it'll help later down the road, though it's hard to say since I've only had one baby breast feed past six months.  So far what I've noticed with the Whole 30 is that I have more energy and feel better during the day no matter how much sleep I get at night.  Before I always used to feel so sluggish and tired after a sleepless night.  There were a couple times when I started freaking out because I thought the Whole 30 was affecting my milk supply.  And if it was, I would have stopped immediately, but I figured out Xavier was just overly tired.  I pumped yesterday and got a good amount of milk so that chased my worries away.  Be assured I would never put losing weight over being able to produce enough milk for my baby.

So, another thing this Whole 30 has been making me do is spend more time in the kitchen and change our eating habits.  We were already pretty health-conscious before i.e. drinking organic milk, eating grassfed cow cheese, and not eating anything with preservatives and HFCS but now I'm actually trying to make most of the things we would normally buy at Trader Joes.  I've been making yogurt, homemade bread, and granola.  OK, I know that doesn't sound like much but for me being able to fit it in has been a big accomplishment and has made my hubby a very happy man.  I've really enjoyed it too.  I hope to try making beef jerky and crackers sometime in the near future.

As far as paleo eats go, I've been trying out a few new recipes.

Now the mango icecream was originally going to be put into popsicle molds, but when I saw how creamy and thick and yummy looking it was, I decided we would just eat it right then and there as icecream.  The boys were thrilled to be having dessert before dinner.  All it is, is a bag of frozen mangoes and a can of coconut milk blended up in the vitamix.  It was SO good!  Another thing I've made are pancakes with just a banana and two eggs and a pinch of baking powder and cinnamon.  They were pretty tasty.  I also made them a second time and added in some coconut flour and blueberries but those weren't as yummy.  I think they would probably taste fine with maple syrup but since I can't have syrup, I opted to eat them with a peach.

Anyhow, I think I have definitely been over doing it in the fruit department (I can't help it.  I don't want summer to end because I've been enjoying so much delicious fruit) and lacking in the vegetable department so I am going to try and up my veggie game during the next two weeks.  

Oh, and as far as the 30 day shred work-out DVD goes, I haven't missed a day yet!  I can't remember the last time I've worked out for 14 days in a row but it's been good for me.  I do think it's been a little hard on my body because my body has no time to recover or rest but it's only for 30 days, right?  After that I think I'll at least do a less strenuous work-out every couple days.
